As my kids will testify, I am not a cook. I don't like to cook and I hate the mess.
However, with this last Crohn's flare, I am learning to find alternative ways of preparing food because I am down to liquids only. After speaking with my nutritionist, who suggested that I try preparing foods that are clean and grain free, I thought I'd give it a whirl. She suggested that I try just a few bites in addition to Ensure to help get the plumbing working. After discovering cloud bread, which I am able to digest with no problem, I decided to try a no carb quiche which is so easy to prepare. Crust 1 and 1/2 cups almond flour 1 egg 1 egg white mix and press into pie pan. Bake at 375 for 17 minutes or until brown. While baking prepare: 4 strips bacon in pan, remove when crispy, add mushrooms and onions to bacon grease, cook until done Add 7 eggs into bowl Mix with 1/2 cup heavy cream Add 1/2 cup grated swiss cheese Fold in bacon, mushroom, and onion Poor into crust and bake at 375 for 27 minutes Mind you I can only eat a tablespoon of the quiche, but it was an awesome alternative to Ensure AND with the help of Zofran, was able to keep it down.
